Made a batch of chicken enchiladas today....it's been so long since I made tortillas from scratch.....but they are well worth the trouble.
I guess the recent mass immigration of Mexicans to our area caused the grocers around here to stock ethnic ingredients (like Masa Harina) for which I am grateful.
Oh, for dessert, I baked Mississippi Mud Cake from the Southern Living Magazine, June, 2004 edition. To die for.
If anyone wants that recipe, I'll post it.
Oh, Mississippi Mud Cake!!!!!!!!! I love that. I'd bet those enchiladas are so good. I can almost taste one right now. (It's lunch time here). :)
